Moroccan Chickpea Salad



Yummy summer salad with a little bit of spice


INGREDIENTS 1 large carrot 1 cup fresh green beans 2 x 400gm organic chickpeas 1/4 cup sultanas 1/4 cup diced dates 1/4 cup cashew cream 1 teaspoon ground cumin 1/2 teaspoon salt 1/4 cup fresh parsley 2 tablespoons sweet chilli sauce

Grate carrot and cut beans into 5cm lengths. Bring a pot of water to the oil and cool for 2 minutes. Add in all other ingredients into a bowl and mix well.

To make the Sweet Chilli Sauce – Makes 1 1/2 cups 1/2 cup dates 3/4 cup hot water 3 cloves garlic 2 red chilli with seeds 4 tablespoons lemon juice 1 teaspoon salt 1/4 cup cold water
