Carrot Oat Balls

Carrots are a rich source of antioxidants and vitamins, and so i like to get them in wherever i can! This recipe is essentially a simplified carrot cake recipe but much less sweet. I love them as a snack throughout the day.


Makes 12-15 Balls

200g grated carrot

180g soft pitted Medjool dates

1/4 tsp ground cinnamon

1/4 tsp ground nutmeg

25g flaxseed

10g white chia seeds

125g jumbo oats


mix all the ingredients except the oats in a food processor or blender until well combined.

Stir in the jumbo oats

Roll into balls using your hands

Store in the fridge in an airtight container to keep fresh for longer.
